Thirsty Owl Wine Company: A Legacy Rooted in Family and Vision

Thirsty Owl Wine Company is a testament to the transformative power of vision, passion, and commitment. Situated on the scenic west side of Cayuga Lake in New York’s Finger Lakes region, this family-owned winery has become a beloved destination for wine enthusiasts, boasting not only award-winning wines but also a rich history rooted in family and tradition. 

The Origins: From Land Purchase to Winery Launch

The story of Thirsty Owl began in 2001 when Ted Cupp, a visionary entrepreneur, purchased 150 acres of land that once belonged to Robert and Mary Plane, pioneers of the Cayuga Wine Trail. The land’s location was ideal for growing grapes, with its sloping vineyards and proximity to the lake creating a microclimate that moderates temperatures, offering protection from harsh winters and allowing for the cultivation of unique grape varieties.  

Construction of the winery and tasting room began soon after the purchase, and by September 2002, Thirsty Owl opened its doors with just four wines and a production of 1,200 cases. Ted’s son, Jonathan Cupp, an Ithaca College graduate, soon joined the venture as president, taking the helm of the family business and guiding it toward the remarkable growth it enjoys today. 

Jon has overseen a period of rapid expansion, with Thirsty Owl now producing over 1,000% more wine than it did in its early days. The winery’s vineyard spans 41 acres and includes varieties such as Cabernet Sauvignon, Pinot Noir, Riesling, and Malbec—a grape that is rare for the Finger Lakes. One of the key factors in the winery’s success has been its dedication to using 100% Finger Lakes-grown fruit, 85% of which is estate-grown. This focus on local sourcing reflects Thirsty Owl’s commitment to supporting the Finger Lakes wine region and its growers.

Winemaker Shawn Kime: A Decades-Long Commitment to Craftsmanship

From the very beginning, Thirsty Owl has embraced both tradition and innovation, a balance that is perfectly encapsulated in the work of winemaker and vineyard manager Shawn Kime. Having joined the company as its first employee in 2002, Kime has spent more than two decades crafting wines that have earned the winery national recognition. His background in agriculture and winemaking, combined with degrees from SUNY Morrisville and Cornell University, has helped him produce wines that are both fruit-forward and food-friendly, designed to appeal to a wide range of customers. Under Kime’s leadership, Thirsty Owl’s wines have won numerous accolades, including the prestigious Governor’s Cup in 2007—a moment Kime recalls as one of the most memorable of his career. 

Signature Wines that Define Thirsty Owl

While Thirsty Owl has earned a reputation for producing a wide array of wines, certain varieties stand out as emblematic of the winery’s philosophy and the unique characteristics of the Finger Lakes. Riesling, often considered the signature grape of the region, is a flagship wine at Thirsty Owl, showcasing the balance of acidity and fruit that the cool-climate Finger Lakes can achieve. Another standout is the Meritage, a blend that combines the strengths of several grape varieties to create a wine that is greater than the sum of its parts. Kime’s fondness for the Meritage reflects his passion for the art of blending, a process that allows for endless creativity and expression.

Sustainability at the Heart of Thirsty Owl’s Practices

In addition to producing top-tier wines, Thirsty Owl is deeply committed to sustainability. The winery has been a part of New York’s Sustainable Winegrowing Program, a certification process that has encouraged them to evaluate and improve their vineyard practices to reduce environmental impact. From solar-powered operations to eco-friendly farming techniques, Thirsty Owl is focused on preserving the land and its resources for future generations. Kime notes that becoming a certified sustainable vineyard was a “no-brainer” for the winery, as their existing practices already aligned with sustainable principles. The certification not only underscores their environmental responsibility but also meets growing consumer demand for eco-conscious products. 

Unique Vineyards, Unique Wines

The physical beauty of Thirsty Owl’s vineyards is another aspect that makes the winery special. The vineyard blocks, which cascade down towards Cayuga Lake, benefit from the natural airflow and temperature moderation provided by the lake’s proximity. This allows for the cultivation of varieties like Malbec and Syrah, grapes that are challenging to grow in cooler climates but thrive in the unique conditions of the Finger Lakes. The winery’s Syrah, in particular, has garnered critical acclaim, earning a spot on VinePair’s 6 of the Best U.S. Syrahs From the East Coast list.
