Grilled Farmer’s Cheese with Strawberries and Pistachios

This month’s collection of delectable recipes is inspired by May Is American Cheese Month! and the onset of one of the most beloved holidays of the year and unofficial start of the summer – Memorial Day.


  • 8 ounces farmer’s cheese, sliced ¼” thick
  • 2 cups sliced strawberries
  • ¼ cup ice wine
  • 1 teaspoon sugar
  • 1 tablespoon chopped mint
  • ½ cup chopped pistachios

Check the firmness of the Farmer’s Cheese – if it is nice and firm, you should be able to do this on the grill as indicated. If it is a softer style, we suggest using a saute pan. In a mixing bowl, toss strawberries, ice wine, sugar, and mint together and allow to macerate for an hour. Preheat grill, season cheese with salt, pepper, and oil. Grill on one side only for about 2 minutes. Transfer to a plate and serve with strawberries and pistachios.
